Are there any special tricks or steps to removing the 12v battery in a v? I searched the owner's manual and didn't see any. (Have swapped dozens in other cars, no need to disconnect, just lift out so I can get underneath it.)

    Background:

Taking trash to the dump after my wife put 2 bushels of apple peelings in a trash bag and they sat for 2 weeks. Must have overflowed because there was 3/4" of apple juice in the Weathertech trunk mat and it overflowed the rear lip and into the spare tire wheel, into the original trunk mats, etc. Those are now cleaned, deodorized etc. Still a slight smell so I figure the logical place is the battery well.

I was surprised at the lack of acoustical sound deadening material in the wheel well under the spare.
any special tricks or requirements to remove the 12v battery?

nope. hook up a 12v source under the hood if you want to keep your memory's.

What sorts of things do I lose if I "lose memory" by just disconnecting the battery? Settings for backup and seatbelts and such? Bluetooth pairings? GPS memory?

I disconnected the battery on my Prius"v" for 20 minutes.

None of the settings were changed except for the clock, which was easily reset.

It appears that most of the settings of the ecu are programmed to EPROMs, and thus, non volatile, until they are "erased" or reprogrammed.

IF you end up needing to disconnect the cables to get enough slack,
disconnect and isolate (insulate) the negative cable first.
That way if you accidentally contact a tool from + post to chassis, no harm will be done.
    Re-connect the negative wire last.

With the ATP there are two initializations that need to be done. I am not home to check, but I remember one being to turn wheel from lock to lock.
