A local Wal-mart declined to do an oil change today stating that they
could not/did not know how to service Hybrids. They mentioned that
they heard the car did not start back up immediately after the oil
change. Can anyone verify if this is true?

I am thinking that they just don't know how to shut off the maintenance
light after the oil change, and don't want to deal with an unhappy
    customer.

Just avoid Walmart, and you'll be fine.
No it isn't true, and you can reset the maint light yourself... I think it's in the "stickies" under the "known easter eggs" thread somewhere.

They are doing you a favor by not servicing your car. Do it yourself or take it to a dealer.

I do mine myself, even easier than on my 4runner, just get a pair of ramps to run up on, and any local auto store takes the oil for free to recycle, saves tons$$ in the long run, and you know it is done right! :)

:) Resetting the "MAINTENANCE REQUIRED" light is also found in the Owner's Manual.

Wal-Mart is the absolute LAST place you should go to get
    any car serviced.
