We have a 2013 Plugin with 38k miles. We are driving to FL from MD and have 2 Kayaks with rack/JBars on the roof. The Kayaks weigh about 100lbs together and guessing the Thule roof rack equipment is another 10-15lbs. Two adults/ small dog/luggage. Wondering if we're pushing the limits on all this?

850lbs would be close to the limit.

i think you're fine, but watch your cruising speeds with those kayaks up top, there's a lot of wind resistance up there, especially crosswinds.

While I can't recommend that weight limits be exceeded due to liability reasons, I will just add that those weight limits have a large margin of safety built into them.

I've put 5 male adults plus camping and rock climbing equipment in the back and on top of my Subaru Legacy and then driven up a boulder strewn mountainside while flooring the throttle in 1st gear.

I don't recommend that, either, but it can be done.

I'd imagine wind resistance is a bigger concern than the weights you are dealing with. The fact that you ask the question on a forum tells me you are a safe driver. You'll be fine.
