I want to get the Toyota mud guards for my Prius V, and was wondering what it's involved in installing these? Something I can do myself or do I need it done by dealer?

There are a few threads that describe the installation of the mud guards as pretty easy. I think you may need to take the rear wheels off so you can drill a hole on each side for proper installation. They say you can just turn the front wheels to get to the right area. I live in SoCal so I dont see much advantage to install them on mine.

I'm also in SoCal and I'm seeing lots of debris on the paint behind the wheels. Is there a downside to installing the mud guards?

Mud guards on Prius V are pretty simple to install. Fronts require just a turn of the wheel to install and the rears do require removing the tire(s) in order to drill and properly screw. I installed a set last week and it took all of about 45 minutes (taking my time)... Since I had the rear wheels off, I gave them a good cleaning from the backside as well.

I dont see a down side to installing them, just elected not to. I have had my v since January and while there have been days where it's rained in SoCal I havent had any issues with debris besides the normal. I am somewhat obsessive with cleaning my car so whatever debris gets on it, I typically clean it off by the next day. Now installing a clear bra for the front is another story. I dont have one on now but wish it was the first thing I should have done since I do have several small chips.

Woah - that's impressive. Way to go, man.
I live on a dirt road, so if I did that, I'd spend as much time cleaning the car as I do driving it.

So I bought my mudguards from Priuschat accessory store and installed them today. As was pointed out I had to drill a few holes with two drill bits but only through plastic, and it gave me a chance to practice using the car's jack and removing the wheel. Here are the after photos:
