So I managed to make a 1000 mile trip and im kinda stuck at my destination because of this, not sure why but whenever I try to turn on my car (press and hold on brake and push the power button) it goes into IG mode. The engine antifreeze resevoir also very recently seemed to have completely leaked during this time as well but im told this shouldnt be causing this.

Had a backyard mechanic work on the AC before all this and I had to get it towed to a dealership because there was a low unpurged engine antifreeze (inverter too but i managed to get that fixed myself), backyard guy had to get behind the front dash to get the parts in as well and this created a variety of obd problems but that was all because the guy didnt unplug the 12v before going to work on it as to what the dealership told me. Could it be something loose or shorted behind the dash that could be causing this as well? Some wires are exposed from the shoddy ac job and mightve been disconnected when I pushed my floormat up of all things.

Try disconnecting and reconnecting the 12 volt battery. If this allows your car to start and run just once you may have a high voltage leak. If standard PAG AC oil was added to the AC compressor it could be the source of the leak.

Maybe you just have a dead 12v?

Sorry but you have so many "Red Flags" in your scenario, I picture a battle scene in Game of Thrones.

    "Empty Anti-Freeze Reservoir"
"Back Yard Mechanic Worked on AC"
    "Towed to Dealership"
    "Inverter too-fixed myself"
"Back Yard Guy Didn't unplug 12 volt"
"Back Yard Guy had to remove Dash"

So all I can say, is yeah,,,,I'm pretty sure whatever problem you are having today, is related to something that you've been doing recently or that has happened recently.

And since most of this work seems to of been executed by a guy referred to mostly as "Back Yard Guy:....I'm just going to say...Good Luck!

Any combination of those red flags could lead to any number of problems. Then problems can start snowballing on problems.
    Until eventually...your car wont start.

At this point, I think you need a qualified technician and some real diagnostic tools and work.

Ill try that, is the AC oil the kind of stuff added with the freon? i made sure to tell him to use hybrid freon since I read regular compressor oil could short the entire system and had the potential to be fatal for anyone working on it, i didnt know it could cause a leak for engine antifreeze as well.
Hopefully, ive heard it should be pretty cheap and easy to change out if thats the case, whats weird though is that all the accessories work just fine AC, radio, touch screen, lights, all functional, would a dead 12v allow these components to work? maybe its working on part of the excess charge on the hybrid battery.
visiting my girlfriends family in GA, fortunate enough to have gotten stuck at a friend of her's house in valdosta. Got it when it had 198k, got it to about 218,578 as of now, not used to the speed limits but gorgeous country roads so far never get to see much tall forestry back in texas, lets you savor it

Hahaha thats hilarious, Yeah im trying to get an appointment there as quick as I can to see what they can do, shouldve known doing a bunch of backyard nonsense would be a mistake and would cost me more than just taking it in to someone who has actually worked on them before
