Only thing not solid on my 2010 is the steering. It has developed a little play on the steering wheel, able to slightly rock left and right when stopped. It goes away going above 10mph

Well here's a slight change of plan I can no longer afford the gen 3 Prius however I can afford the gen 2 Prius

How do people like there gen 2 Prius in the uk I can get one for around £3,500 compared to the gen 3 which is around £7,000 - £8,000

Thank you in advance just want something to start saving me money and better mileage.

In the Gen II, I would be looking at 2007 or newer. Again, there was a mid-model refresh done that year, and more features were offered as standard equipment.

This chart I stole from someone lists the various features at each package level for the Gen II.

I don't know if models were the same as the UK, and I have not owned a Gen II. I gathered the info when I was in the market for a used Prius and had considered a Gen II because they are cheaper.

This is a very minor point, but the Gen III introduced an electric water pump, which eliminated the accessory belt. The Gen II still has an accessory belt, which has to be replaced very infrequently.

... and is far less expensive than the electric pump of the third generation.

How often do these need replacing and is this something to look out for when buying second hand if this has been replaced

Most all cars have accessory belts, and they can last 100,000 miles or more. I have only ever replaced 1, and it was due to changing pulley sizes and not due to wearing it out.

The belt itself is cheap $15-$25 and easy to replace.

It's nothing to worry about unless there is an accessory that is going bad and causing the belt to prematurely wear out.

My point wasn't to alert you to problems between the Gen II and Gen III, but more to emphasis that there aren't major differences. Don't think you could go wrong either way.
