It could turn out easy or not, depending on how the existing LED boards are built. If they are made with passive current limiting (plain resistors), then easy. If they have active regulation on board, you could find them fairly stubborn about their brightness as you supply lower and lower voltage, until they ultimately just flicker or go out.

Same thing can happen with interior LED bulb retrofits, some of which are passive and some active; the active ones won't look very graceful on circuits like the dome light that try to smoothly fade in and out.

They are current limited by just resistors. $1 Prius LED Brake Light Repair | PriusChat

Why ?? Surely there are better things you can do with your time and money........aren't there ??
Your '05 model is probably near the end of it's useful life; pouring money into it for "mods" now is just a waste.....because it will not be easy or cheap, maybe to the point of not even being practical.

2005 is still less only 13 year old. So it can easily be only at half way point.

Modification would only require cutting of couple of wires and less than 20 euros or dollars worth of components. So if he really wants the look and there’s no legal reason not to do it then why not?
