Seems like the original issue to me? In trying to avoid a second round of warm up steps I'm thinking of leaving the car parked without shutting it off (in the Summer when it is warm). This causes the doors to remain unlocked which I don't want to do.

This could be an issue in the Winter as well, since one might want to warm up their car but not leave it unlocked...

Well it's only unsafe if someone breaks your window and drivers off with your car (and your insurance company found out that you left the car running).

You can lock the doors with the manual key as you've found out.

SET PARKING BREAKS FIRST, then roll all windows up except driver window, step out and close driver door. Lock all doors from the outside and lastly pull the driver window switch up and pull arm out quickly. Car will remain on ready with all doors locked.

In some states, its illegal to leave a car on idle w/o parking brakes engage in a public parking or public streets. I want to see a police try to peek in to check if parking brakes are engaged in my prius, I leave it idle when in going in stores no longer than 10 mins

Camry has auto parking brake, not sure how it works manually. There is a red light that comes on, sometimes, not sure what that is all about...

The red light on the parking brake switch is the indicator that the parking brake is engaged.

I want to watch as someone tries to get their arm back out of the window after hitting the "close" button for the window :-D
