Having dabbled in the "insurance thing" a couple of years ago, I found you can't judge a book by its cover. A couple minutes of a national search for prius v:

Example A in Houston) Totaled. undercarriage damage est. @ over $8k.

    prius v totaled.jpeg

Example B in Las Vegas) Front end damage with an estimated value $7300

You were able to drive a mile? I'm surprised there was no coolant loss, the bottom of the radiator is dinged pretty bad.

Perhaps if a body shop can give a paid estimate with a list of things needed.
Perhaps if you can DIY all those parts.
And Perhaps they can straighten anything you cannot, or if not needed great.
And even better if you know or are friends with someone in the body shop biz.

Then, maybe it might be worth fixing.

However, you will need to do the paper math with your time+materials/parts to fix
verses your time wrenching off the parts and extracting the engine to resell and perhaps lower your losses.

Hey, here is to maybe it only being a couple grand in parts, estimate/straightening, and your labor of love (love of labor?)
to get it to your liking and fully safe driving condition.

Just a note: even the pro's can do estimates and while they are involved in the repair, can say oops...gonna be more than I thought!

Seems like you've put a lot into it already. If it drove well then I have faith that you can get it back together again. First thing I would guess is make sure it's not bleeding coolant. After, get an alignment. Then determine if it is worth continuing.
Having dropped the "subframe" to try to fix a caster problem in our Prius v I can tell you the suspension is amazingly modular...

since you have a fresh engine... I would suggest finding a shell with a bad engine, then swap all your good stuff over.

...and maybe buy a catalytic converter if the new-car-shell doesn't have one.

Not being a climate Karen, but rather a car with one of these devices installed is easier to sell when that time comes.

    What year, 2010 or 2011?

Also, how are you going to decide which HV battery is in better condition? Or are you going to keep both?
