We've gotten better at monitoring, because the equipment has gotten better - smaller, cheaper, 24x7 samples rather than just test strip before or after meals. Tighter regulation and more controlled dosages = better outcomes.

Starch can turn into sugar, if held around 150F, some enzyme works on it I think. Cornerstone of making alcohol with grains.

Not likely there will be that day. I don’t have the cards. It could be not that many here will be here either. If Prius stops being made during WW3, probably no site after the world emerges. Too dark looking? I worked with a man who lived through the Nazis invading Czechoslovakia, then the Soviets, then he escaped in 1968 with his family. He used to say was he too dark looking. He was white of course.
looking back over my last 66 years, nothing is too dark looking. the last 20-30 just kept getting worse, and I don't see a way out of the spiral because no one seems willing to cooperate, compromise, and try to get back to some kind of sensible operating system. I'm a lifelong pessimist/realist, and I hope I'm wrong.
