I have an '06 prius that Im trying to install some used oem leather seat covers on the front seats, but I have no idea how to remove the two plastic pieces at the top that contain the holes the headrest slides into. Can these plastic bits be removed without breaking them? These are pretty much pinning the seat cover down to the top of the seat.

You have to release them from the inside after sliding the seat cover up or turning it inside out while still attached at the top. I forgot exactly how it releases. Most seats have a plastic tab to push in. Some are secured with screws.

You can also just stretch the seat cover over the plastic bits, that is what I did.

The leather is awfully tight though, and I don't want to damage it taking it off the old seat. Can those plastic bits come out somehow?
