The Autozone clerk said that his tool would not diagnose anything except something from the Check Engine light, and would not be able to diagnose the Master Warning light or any of the others.

I think the code readers vary by store, many have posted codes from AutoZone and other shops. Maybe try another store?

I am no expert, but could running the coolant level this low be the problem. Is there a specific code for low inverter coolant. Seems to me that in a high heat location, it could cause the problems given. Surely one of the mechanical experts can advise on this.

I'm taking it to a hybrid specialist that I trust. He is thinking it is either the inverter pump or the HV Battery :/

Code was PAO80. It was the HV Battery. I use the car for my income so I didn't want to mess around. Already replaced it with a brand new one. My mechanic even stayed after close on a Friday to get it done quickly. Yes $3000 sucks but the one that failed was a refurbished that only lasted 28,000 miles so I'm happy I don't have to worry about it now (it happened right before I bought it). On my 30 mile drive home I was getting 56 mpg, while the same drive there I was getting about 45.

    At least it's over!

Yep. He installs a few new batteries each week. The place is Boulder Hybrids in Boulder, CO. I don't know if any of you are familiar with Boulder, Colorado, but there are a LOT of Prius's here. He also services hybrid fleets for courier and taxi companies. He even gave me the name of a guy to call for a job with one of them. He is the largest installer of Toyota hybrid batteries not sold by a Toyota dealership (in CO).

That's him! He really does know his stuff. I cannot recommend him enough.

Also thank you all for the help and input. This place is sacred ground for a prius owner making his way in the universe.
