Ive read a bit about bypassing the coolant tank that i smashed. Is this an option on a gen 2. Im sure itll set off lights but im only trying to get the car moving again.

Look up diagnostic procedures for the fuel gauge in the Meter section of the service manual. You remove the rear seat base and a small cover to access the fuel tank connector.

Sure, if you always keep the tank full and keep track of miles, you can ignore the bad gauge. That assumes that nothing happens that would cause the mpg's to decrease a bunch.

Given the bent wheel (or wheels) situation i might call this wrecked prius scrap. In that event, what are the parts I should remove before the city hauls away the car? I think the cat is OEM and of course the battery, inverter, battery fan, instrument cluster, mfd, headlight (im trying to think what are things that could go out on soon on my high milage prius or bring in $ on ebay)....any fuses or ecu parts?

Ok so it seems she starts and goes into gear now , wants to drive but that wheel is pointing the wrong direction. Also the coolant leak seems to be coming from a specific port in the pictures . What is this and where is it supposed to go?
