During this trip, I used EV mode a lot but avoided the battery getting low to 3 bars. Still, my battery charge starting to stay at the middle (60%) and rarely go up to 80% like it was going earlier.

Did I mess up my battery health?

Looks like you're in good hands and in the right place regardless.

very possible. ev is never good for the battery, and worse on old ones. learn to pulse and glide.
that being said, 60% is where the battery should spend most of its time under normal driving circumstances

As has been said, nah, don't do that. Constant driving in EV mode will significantly shorten the life of the hybrid vehicle (HV) battery and will not improve your long-term fuel economy.
