Curious bean spike

    I was surprised by this glucose spike:

    The same pinto beans at lunch became an unexpected spike at supper time. Google claims overcooking to mush makes the complex carbs easier to digest and recommends refrigerating them first.

    Also recommended fresh baked bread be refrigerated, which also significantly decreases its glycemic index.

    But tbh, who's going to do that unless they're already severely insulin-resistant, and on meds for it? :p

    Diabetic lectures without continuous glucose monitoring system lets these sneak through.

    We've gotten better at monitoring, because the equipment has gotten better - smaller, cheaper, 24x7 samples rather than just test strip before or after meals. Tighter regulation and more controlled dosages = better outcomes.:)

    I thought it was going to be about bean prices. Haven’t yet entered the glucose monitoring world. Do I want to live past 90? No.

    Starch can turn into sugar, if held around 150F, some enzyme works on it I think. Cornerstone of making alcohol with grains.
