Have your dealer do a search of inventory on hand as well as on the water. If one is available, then your dealer gets to convince the other to trade cars. If one is not available (or soon to be available), then you get to hold your breath and practice patience.

    Breathe in.

    Breathe out.

Forget this, and nothing else will matter much.

It felt a little hesistant when I first accelerated. Is that normal?

That little hesitation is the Electric Motor spinning the Internal Combustion Engine to speed then engaging the Valves, Spark, and Fuel. This is pretty normal, and very easily compensated for, just look an extra 40 or 50 feet ahead of the car and drive like you mean it. I almost liken it to turbo lag, but without the extra added power.

That lag is perfectly normal. The Prius wants to start moving on electric only power because the algorithm is designed for maximum fuel efficiency (thus gentle acceleration). You can reduce the lag however by progressively pressing the pedal down over a second or so, in which case the combustion engine will be spun up faster and help accelerate the car quite rapidly. Given the 0-60 time is a little over 10 seconds, the Prius is no slouch once you've got the hang of it!

As to the wait or not for your package #6 silver, I'd say that if your dealer can find one now and you've decided to buy, you should go for it. The 08 models are not likely to have any substantial changes simply because there's a substantial redesign due for the 09. On the other hand, you might find that if you have to order one, the dealer will not be able to get the color/package you want in an existing vehicle already in stock in an area dealership or due for arrival soon, and will have to order from the factory, resulting in an 08 model anyway, albeit you would then be likely to have to wait until late summer or fall for delivery.
