The 12V battery on my 2019 Prime appears to be dead. Didn’t want to take a trickle charge. Followed the manual to boost it, but sparks seemed to fly and the horn went off. What gives?

Did you check electrolyte levels and battery polarity when hooking it up? You should be able to jump start it to get it down to an auto parts store to get the battery checked/tested.
If you've been trickle charging it for years and never checked the electrolyte levels, all of it may have boiled out. The battery is due for replacement. Once the electrolyte gets below the plates, refilling may not bring it back.

Put in a new battery. Now it doesn’t recognize fob. Put the fob up next to start button and get a bunch of hazard and non- function messages re: brakes not working, etc. and the yellow triangle danger sign flashes. I’m hoping it doesn’t need to be towed in to be reprogrammed.

you'll need to read the codes with a prius aware scanner

I'm going to guess that at some point during boosting, the Red/Black (Pos/Neg) leads were reversed and you fried the electronics.

Yep, you may have reversed the polarity when you tried to boost it. We're you using a newer battery booster with built-in polarity check or an old school booster?
When was the last time you changed the batteries in your fob? Mine only lasted 3.5 years before I started getting intermittent low fob battery warnings on my dash board on exit.
