Has anyone been able to install an aftermarket stereo system? It would be nice to have a Bluetooth capable stereo system installed in my Prius.

Yes, we do them all the time. You need a 1DIN high radio and the brackets that hold in the dealer installed CD player. Install the radio where the CD player would go (behind the flip down door) and modify the two wiring harness adaptors as described in this thread: Radio Auxiliary Install? | PriusChat

If there's nothing else wrong with the radio, you can get a blutooth attachement for your car. Mine came with a Tranzit Blue ISFM23. It plugs in to the antenna inlet on the radio, you connect the car antenna to the input on the little box. You can get one at Amazon for about $60, and it's pretty easy to install.
