Any ideas on a good meat substitute for sandwiches?

    For lunch, I bring a tuna or chicken spread sandwich with tomatoes.

    It's a pretty bold statement to say eliminate meats and dairy products and artery plaque will not only stop, but go away.

    So the question: What is a good substitute for tuna or chicken spread on sandwiches?

    A grilled portabella or eggplant can work.
    I've used humus as a condiment on sandwiches. You could bulk it up with grated veggies.

    It's my second post!

    I would have posted about my new (to me) Prius, but it's snowing and it's a bad time for pictures. She'll look nicer with the summer wheels and the window tint.

    Concur, but I have some small respect for the sincere veggies out there....as long as they don't start to resemble Missionary Baptist preachers. ;)

    I used to love Spam on toast w/mustard!
    Probably very close to being vegitarian......not so much for being healthy. :eek:

    Man... I'd friggen starve.

    I do often make portabello, or shitake roasted with olive oil sprinkled with garlic and fresh salsa...

    I prefer them with provalone and grated romano on top though...



    As for what's for dinner tonight:
    Filet mignon with garlic shallot butter
    Scalloped potatoes
    Steamed broccoli, carrots and cauliflower with fresh tomatillo salsa.

    I'm on day 31 of vegetable/fruit juice fast. 28 lbs down and not one bite of solid food including meat. Can't believe I ever, ever thought those words would come out of my mouth and with a smile. Nope.

    Good ideas

    Grilled eggplant and grilled capsicum (or aubergine and pepper in proper English), with a bit of olive oil and some basil or fresh cilantro (coriander in English). It would benefit from some low-fat cream cheese if you can bring yourself to use a little bit of dairy, but it's nice on its own too. You can throw in some sun-dried tomatoes, but it could make it a little bit greasy. Either way, it's lovely.

    As above, but with a bit of pesto spread on the bread.

    Raw red or yellow capsicum, tomatoes and hummus.

    Spinach and rocket leaves with some good sliced tomatoes and a bit of balsamic vinegar. Not too much vinegar, though, or the sandwiches will go soggy.

    Possibly less-good ideas

    Sliced cucumbers. Pretend you're Southern English. This, I think, is proof that Southern English people cannot cook. It's why, when my Dad lived in Southern England, he'd go to France every night for dinner.

    Or you could go for the Northern English classic, the chip butty. It avoids meat and dairy, but I am not convinced of the health benefits.

    Not if it's in a sandwich. But proper fish and chips in newspaper was one of the great pleasures of my youth.

    Careful. If she's Northern English and lives in LA and you mention chip butties to her, you might make her so homesick that she'll be in a cab to LAX before you've finished your question.
