I tried this recently in my v but I did not get the slip indicator light when I pressed the brake firmly. Am I missing something?

Did you press firmly and hold? You press the pedal as far to the floor as possible.

Yeah, you gotta push the brake pedal hard to activate it

This seems overly complicated. Why not just keep pressing the brake pedal while pressing the accelerator peddle until you can feel the car go forward before releasing the brake pedal.

That sounds more complicated. You are stopped of a hill. Your foot is on the brake. Press hard when ready to go, the car beeps, and when you let off the brake it does it roll back and you accelerate up the hill once you apply the gas.

Assuming it is available on your's: it takes a fair amount of pressure to activate Hill-start, maybe double the normal pressure?
