    you'll need 2 gallons for the job, the inverter doesn't take a lot of coolant, but the engine coolant takes about 1 gallon or so. Have 2 just in case you need more.

    I greatly appreciate your input!
    I want to do the following things:
    2) replace the ICE/hybrid cooling + water pump
    4) replace the brake fluid
    5) replace the spark plugs
    for the last, I have to remove a lot of thing to be able to extract the old plugs. Can you recommend any preventive maintenance that I could also do so I won't have to disassemble that portion again in the near future?

    My prius has 100k coming, and I know it might be an overkill with the pump, but I figured since I am removing the coolant I would just go ahead and replace the pump.

    I've found one of the comment you left for 118K maintenance:

    spark plugs
    pcv valve
    EGR pipe cleaning
    engine and inverter coolant drain and refill
    Brake checks, lube sliding pins if haven't done so
    brake flush
    transmission drain and refill if haven't done so
    engine and cabin air filter
    HV battery fan clean
    and Throttle body cleaning.

    I did all that at except spark plugs and lube sliding pins at 95K

    you don't need to replace the WP, my prius is at 230k and its still on the original WP.

    As for those maintenance I've mention, yes do them all. For the removal of parts for the spark plugs, that's all you can do for those part removal is the spark plugs.
