    Yup. That has been done here in the name of better sound quality from speakers too. If you see docvijay's site (just find a post by him and click the link in his signature), and go to the LED mirror mod, you'll see how the door looks like without the interior panel.
    Katzkin sells high quality leather based on impressions on this site but given that you said the leather is of high quality, I assume you have Pkg 8

    This can be added aftermarket (see sigma automotive)
