I am a ride share driver and have a Gen III 2011. I bought it used in 2015 with 64k miles and I am about to cross 200k miles. I have put nearly 40k/yr on the car, so I drive it a LOT.

Other than fluid changes and cleaning the cylinders, I have not had any major work done on it.

I love the car and want to keep it (it has an upgraded stereo, backup camera, leather, and DVD player).

What should I be doing, what can I expect in regards to maintenance and upkeep? What is known about high mileage Priuses?

What do you mean by "cleaning the cylinders"?

Brake caliper lube- every 3 years or 36,000mi. Not in manual but by the time a new PC member post seized pads and new rotors needed, it’s because of that or lack there of.

There are many things you can do to help the car keep running and help to avoid troubles. Nutz about Boltz has many videos in the 3rd gen maintenance section that can be helpful.

Off the cuff you mention fluids, I'll assume that includes brake fluid every 3-4 years, transaxle fluid ever 50k, coolant (engine and inverter)

Other than that spark plugs would be something to address if not done.
Clean the EGR tube every 50k or so
As Grit said above lube the caliper slide pins
    Clean the hybrid battery fan.

Yup, filters, brakes, transaxle fluid, EGR cleaning, intake manifold cleaning. Oil catch can and brake fluid change?
