This sounds like exactly what happened. When I turned off the auto high beam, the switch just happened to break.

The photos @alanclarkeau kindly posted show that the same switch assemblies¹ are also used on right-hand drive models. I checked, and part number 84010-47250 is indeed found on Prius cars built for sale in Japan, where its list price is ¥3720, or about $35 (U.S.) at this writing. It’s likely to be available from Japanese exporters; even with another ¥2000 or so for international shipping, you’d come out ahead.

¹ 84010-47210 is the version of the switch assembly with the HUD button; 84010-47250, without.

My automatic high-beam switch latch broke, and I bought a replacement from the dealer ($140 or so).
My 2016 Prius Touring doesn't have HUD, so I made sure to ask the dealership to order the correct assembly (no HUD) and they checked the VIN before they ordered to make sure it would be the correct part.
From looking at the assembly (see Pics), it looks like it is replaced from behind the dash and doesn't pop-out to the front (cabin-side).
Is there a YouTube or a "step-by-step" guide on how to gain access to the back of it? Or, am I just going to have to figure it out?

The Repair Manual (more info) has illustrated instructions, summarized in my previous posting.

Yes, I read your previous post. But I may have misunderstood what you are describing.
Are you saying that the entire panel with all the switches is removed (in the picture attached, it is the panel outlined with chrome trim)

Yes, that’s the one; it just unsnaps, more or less. There’s a picture in the Repair Manual.
