It's pleasing to see a bunch of us understand the difference & significance between carbs, fats, fiber, etc. That said, I do occasionally cut back on butter (unsalted) and go for the non-animal fat/fake version. BUT ... every once in a while I do enjoy scrambling up the eggs in the bacon fat. :rockon: .
I like to break sugar down outside the body. You take strawberries and you cut 'em up, and you put about a cup or 2 of sugar on there. The invertase enzyme starts working, in about a hour you have strawberries in liquid glucose+fructose I presume. I do not know but it's good and you heap it on a cake and add bad fats (cool whip). Based on the rat experiment, this is good for you.
transfats are in all processed beef so we all eat a bit of it here and there. as far as peanut butter. i do Adams. its the kind with an inch of peanut oil on top and one that i have to spend 10-15 torturous minutes stirring before its ready for use. but its ingredients are one; peanuts and that is why i buy it. the taste is unmistakable with its lack of sugar added but we like enough that a wholesale place had it on sale by the case so we dumped $100 on some cases a few years ago. we have 11 jars left. we got them at less than $1.50 a jar. dont know what we gonna do when that runs out as far as butter/margarine. we have yet to have figured out a better way to make food than nature. my one and only rule; the closer it is to the way nature intended it, the better it is for me which means butter wins by a long shot. i spent years being duped by ads and i went for them hook line and sinker. the one good thing about the internet is the amount of information available. now half of it is right, the other half is not. (at least i am hoping the internet is "at least" half right!) the debate rages on about what we should it and the "good" stuff seems to change yearly and i suspect various lobbies are to blame. right now, its nothing white, no beef (all MacDonalds beef products have at least 2 grams of transfat in each serving?) nothing processed and that is a tall order and i applaud the person who can manage that. as far as the Eskimos; a lot of the reason why they are healthy has to do with the calorie burn required to live in a cold climate but again its the type of fat that is most imoportant. most fats that come from the seas are Omega 3's which are "great" fats (this means they are better than "good" fat) one of the many health sites i browse recommends a daily dose of Omega 3's, Vitamin D (more than 65% of adults are deficient...if you live in Fl or CA, you might be in the 35 % but also might be susceptible to melanoma) Vitamin C and Zinc (supposed to be best for colds)

Definitely butter. After all, it's something I can make in my own kitchen! (best butter you'll ever taste is that which you made yourself) I don't trust what any of the 'experts' have to say. We also use some virgin coconut oil from time to time. Yum. I think back to the days when it was all Country Crock, Tang, aspartame, and "eggs were bad for you". Ha! whatever.
