They seem so out of place. I am doing a HID retrofit so I thought I would just leave them unplugged. Anyone have any downside to ditching them?

They're called parking lights. Why would you want to disable them?

Others change them out with LEDs that match the color temp of the HIDs.

I thought they were required by law - at least to the extent that car makers are required to put them on.

They are a requirement on USDM vehicles, as are amber front side reflectors.

However, I didn't think pointing that out to the OP would make any difference.

Does make a difference to know, thanks. Still not going to use them tho. Might do some type of colored LED at some point.

The laws for "parking lights" and side & rear reflectors date back to the days when headlights frequently burned out, and most cars only had one little tail light. Its unlikely that not having any of those things will result in the FBI hauling you in, but that's why they are there.
