Would it make sense to buy the prime if I never intend to plug in?

If your spouse has a cellphone which she plugs in to charge, she'll find the Prime to be not much different... except that it runs on gasoline if she forgets to plug it in. (I'm sure we've all had times when we wished our cellphones did that!)

If you have a place to park near an electric outlet, you'll find that plugging the car in is a lot more pleasant than pumping gas. (Your hands won't smell of gasoline.)

We do most of our driving locally within a major metropolitan area. We have a 240-volt level-2 charging device in our garage which fully charges the Prime in a little over two hours. From time to time we will use public charging stations when they're convenient and fit into our travel schedule.

We've also taken several longer road trips, including a 500-mile trip to Canada, and found the Prime to be comfortable and competent on the highway.
