I have a limited time that i can charge at work due to the outlet location. If it takes 3 hours to get a full charge but I only have 2 hours to charge is it ok to just unplug while the charging light is still on? Should I only charge when I know I have enough time to get a complete charge.

I do this all the time - I was under the impression that it's perfectly all right. Looking forward to seeing what others might have to say.

It is actually better for the battery to get more shorter charges

yes, the only thing is, make sure you are unplugging from the blue handle end, not the outlet end. that is, disconnect the cord from the car first and from the wall outlet second (if using the supplied 110 V charger).

On a related note, is there ever a reason to unplug the charging unit from the wall? I leave mine plugged in all the time, even when my PiP isn't charging.

Sure, if you plug in a semi-public place, like an apartment building garage.

    I unplug mine...I charge at work Mon-Fri. It uses 1.4 watts when plugged in...so 5 days is 168 watt-hours...almost one mile of electricity (I average ~190 wh/mile)

Picked up my Prime 2 weeks ago. Charged it (partially) for the first time yesterday. Pretty amazing - 57MPG :) Gonna TRY to charge it all the way tonight - see how it does on the way to work in the AM :)
