I'm trying to remove the (rear) headrests from the 2018 Prius 2. Is this possible?

Our Australian version come out - but your outboard ones fold I think - maybe not removable. Why do you want them removed?

Likely, but why? Do you realize they can tilt forward?

I'll be doing lots of camping in it, and it's easier to put a cooler/plastic case down in the seat area to prop up the overhanging area where your head would be. Headrest being there, even one that folds down, all gets in the way.

You might check out @JimmyPri - he's posted some videos on his camping setup - here is one, but he's done some YouTubes too

I just took out all the headrests in my 2017, so it shouldn't be a problem. Just know the rear headrests have two buttons to push to get them to come out all the way.
